Coo-coo for Cocoa Muffs!

Who doesn’t want chocolate for breakfast?! Studies at Tel Aviv University show that perhaps you should eat chocolate for breakfast, woohoo! Not only is the morning when your metabolism is fastest but it is a great time to eat a sweet treat in order to prevent yourself from craving sugar and carbs for the rest of the day. The trick is to add a bit of chocolate into a mix of protein and healthy fats. So, add some dark chocolate to your oatmeal with craisins and almonds or add some chocolate to your pancakes or yogurt parfait!

I have had many requests for these Chocolate Chip muffins so I hope you enjoy! Better choco-late than never!

Bex’s Coo-coo for Cocoa Muffs


  • 1 1/2 cups of all purpose flour
  • 3 tsp baking powder
  • 1/2 cup of coconut sugar
  • 1/4 tsp. salt
  • 1 1/4 cup of chocolate chips
  • 1 cup of almond milk
  • 1/3 cup of melted butter
  • 1 egg


Preheat oven to 375 degrees F.

Mix together the dry ingredients and then add chocolate chips.

Combine milk, butter and egg then stir into the dry mix. Do not beat.

Melt a few chocolate chips and drizzle over the baked muffins after they are cooled. Eat for breakfast or dessert! Bon appétit!
