Another snow day in DC, baby! Ah, the feeling of waking up and knowing that I can experiment in the kitchen with a new breakfast treat is great! I have been dying to try baked grapefruit for quite some time now, and let me tell you; it is absolutely unreal. Before placing the grapefruit in the oven to bake, I drizzled a warm mix of cinnamon and Sweet Spreads Cinnamon Roll Coconutter on top so that the grapefruit would bake with this delicious all natural coconut butter seeping into it. If any of you peanut butter/almond butter fans have not tried Sweet Spreads yet, you are missing out!
Once the grapefruit bakes, remove both halves from the oven and top with creamy Chobani Greek yogurt and Nature’s Path Love Crunch. I used the Apple Crumble kind but have tried the Dark Chocolate and Red Berries as well as the the Carrot Cake, both of which are absolutely UNREAL!!!
Baked Cinnamon Grapefruit topped with Greek Yogurt and Apple Crumble
Ingredients
- 1 grapefruit
- 1 tsp. Simply Organic Cinnamon
- 1/4 cup Love Crunch Apple Crumble
- 2 tsp. Sweet Spreads Maple Pancake Coconutter
- 1 Chobani Vanilla Greek Yogurt
Instructions
Preheat oven to 375 degrees F. Slice grapefruit in half and use a knife to separate the grapefruit into sections. Pour 1/2 tsp. cinnamon and 2 tsp. coconutter in a small bowl and microwave for 15 seconds. Mix and drizzle over grapefruit halves, which will bake into a delicious glaze.
Place grapefruit halves on baking sheet and bake for 15 minutes.
Remove from oven and top each with half of the Greek yogurt, half of the apple crumble and sprinkle with remaining cinnamon. Bon appétit!
