Grandma and Grandpa are coming to visit?!? Get outta town!
After talking to Mama Doser on the phone last Wednesday, I found out that G&G were headed up to our family cottage in Westport, Ontario for the weekend. Our cottage on Crosby Lake just so happens to be within an hour and a half distance from St. Lawrence, and conveniently, not too far off the path to and from Canada. Thoughts filled Bex’s head and as she soon got off the phone with Mama Doser; she decided to give Grandma a ring.
I suggested to Gram that perhaps two of my favorite people stop here on their way to or from the cottage and she thought the idea was just grand. So, we decided that it would work best for them to swing by for a little afternoon coffee date on their way back home to Rochester, NY on Monday afternoon.
Yippie!!! Grandma and Grandpa are coming! A nice little taste of home.
So, on Sunday I baked during my prime hours (usually between 10:00 p.m. and 1:30 a.m.). I whipped up some healthy and super yummy breakfast cookies with a mix of Greek yogurt, craisins (my favorite) and a hint of cookies ‘n’ creme chocolate.
When G&G arrived we sat on my townhouse porch, with some freshly brewed Tim Horton’s coffee (courtesy of the massive canister that Grandpa brought me…thanks Fred) and some cookies over great conversation on a beautiful monday afternoon at SLU.
Crais-y Oat & Cookies ‘n’ Creme Breakfast Cookies
Ingredients (yields a dozen cookies)
- 2 bananas, mashed
- 1 Chobani plain Greek yogurt
- 1 tsp. vanilla extract
- 2 cups of Quaker Old Fashioned Oats
- 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1 tbsp. sugar
- 1/4 cup Ocean Spray Craisins
- 1 Hershey’s Cookies ‘n’ Creme Bar, broken up
Preheat the oven to 350 degrees F.
In a medium bowl, slice up two ripe bananas and mash with a fork. Add Greek yogurt and vanilla extract and mix well.
Then add in all dry ingredients. Mix until combined and lastly, add in craisins and broken up Hershey’s bar.
Form the dough into balls and flatten a bit on the cookie sheet. Bake for 10-12 minutes. Bon appétit!
