Gingerbread, Gingerbread, Gingerbread Cake…

Mmm, the flavors of the season! From peppermint to eggnog to gingerbread…how can one even choose.

My roommate Abbey definitely knows me all too well. A Williams-Sonoma pull-apart snowflake cake pan with gingerbread spice quick bread mix for this year’s Christmas present?! Well done, Ab. Well done.

With an addition of some chocolate chips and icing, this cake is simply beautiful. Some of my housemates really loved today’s study break accompanied by coffee and cake.

If you need a gift for mom, grandma, sister, friend etc. then this pan and gingerbread mix combo really is a perfect choice!

Snowflake Gingerbread Chocolate Chip Cake

Ingredients:

  • 1 bag Gingerbread Spice Quick Bread Mix
  • 1 stick of butter
  • 3/4 cup water
  • 2 eggs
  • 1 cup chocolate chips
  • Optional: icing

Instructions:

Preheat oven to 350ºF.

Melt a stick of butter in a saucepan on low heat. Pour into a medium-sized bowl and mix with water and eggs. Add in quickbread mix.

Mix well and then add in chocolate chips.

Grease pan thoroughly and pour batter into the pan.  Bake for approximately an hour. Ice the cake if you so choose. Bon appétit!
