What sounds better than healthy parfaits for two on this little Sunday Valentine’s Day?!
I first learned of VBURST Vitamin Shots through one of my best friends and roommate for the past three years, Abbey. Her boyfriend, Justin Bruckel and his co-founder, Chris Martin, both St. Lawrence University alumni, launched VBURST Vitamin Shots in 2015.
Each shot has a blend of vitamins, minerals, antioxidants, electrolytes and amino acids and comes in four flavors: Green Apple, Tropical Mango, Orange Lime and Strawberry Lemonade. I came to thinking that the refreshing taste of a VBURST shot would be pretty tasty in a breakfast parfait. So, I invited my good ol’ pal, Tara Freeman, over for another brunch and not only did we mess around with taking some really fun pics of our parfaits, but we savored every bite of these little brunch desserts after our baked egg soufflés.

Toasted Almond & Tropical Mango Parfait with Roasted Cinnamon Apple
- 1 Chobani Plain Greek Yogurt
- 1 Tropical Mango VBURST Vitamin Shot
- 4 tbsp. granola
- Half a green apple
- 1 tsp. cinnamon
- a small bit of butter
- Sliced almonds, toasted
In a small saucepan over medium heat, toast sliced almonds for approximately 10 minutes.
In a small bowl, mix together VBURST shot into plain Greek yogurt until mixture becomes a bit soupy. Split between two glasses. Top with 2 tbsp of granola each.
Meanwhile, melt a small bit of butter over medium heat. Add sliced apple and sprinkle with cinnamon. Toss apples until softened.
Top yogurt and granola layer with warmed apple and then toasted almonds. If you’re feeling extra fancy, rim your glass with some honey and dip in cinnamon for a great presentation. Bon appétit!
