I’ll just romaine here with this salad for the rest of my life…

Ah, nothing beats a fresh summer salad to enjoy with friends and family! Mama Doser recently tripped it to DC and I couldn’t be happier to have spent a perfect weekend with her. With a handful of my friends wanting to see her as well, we thought it would be best to throw a nice little BBQ so we could all enjoy some time together.

My younger brother, Jeff, and I always loved adding croutons to our salads growing up. That extra crunch was “the best” especially in our Mom’s summer salads filled with fresh fruit and veggies.

For our DC BBQ, I decided to make a Blueberry & Cantaloupe Romaine Salad with Setton Farms’ new Pistachio + Blueberry Cranberry Chewy Bites . Setton Farms’ pistachios have been one of my favorite snacks ever since I started blogging and I have loved experimenting with the latest pistachio chewy bites (last year I made these amazing Pistachio & Berry Granola Bars with Setton Farms Pistachio Berry Blend)

And hey, they knock my crouton love out of the ballpark in this salad. These cute little bites are gluten and dairy free, vegan, Non-GMO and Kosher. You need to try out this recipe for your next BBQ this summer – guarantee you will love it!

Blueberry & Cantaloupe Romaine Salad

  • 1 large heart of romaine, chopped
  • Half a fresh cantaloupe, cubed
  • Half a pint of blueberries
  • 1 cucumber, cut into fourths
  • Setton Farms Pistachio & Blueberry Cranberry Chewy Bites, split into pieces
  • Balsamic Vinaigrette
  • Freshly ground pepper

Rinse and chop up romaine. Dice the cantaloupe and cucumber and toss in a large bowl with rinsed blueberries.
